L&rsquo;huile d&rsquo;olive produit la m\u00eame alt\u00e9ration de la fonction endoth\u00e9liale que le reste des repas riches en mati\u00e8res grasses. La nourriture de fast-food, cheesecake sont les pires, mais l&rsquo;huile d&rsquo;olive (ici, de l&rsquo;huile d&rsquo;olive raffin\u00e9e) n&rsquo;est pas loin derri\u00e8re (fig. 5) (1).<\/p>\n<p>Les \u00e9tudes qui ont sugg\u00e9r\u00e9 des avantages endoth\u00e9liales apr\u00e8s la consommation d&rsquo;huile d&rsquo;olive ont mesur\u00e9 quelque chose de diff\u00e9rent : l&rsquo;isch\u00e9mie induite (2,3,4) contrairement au d\u00e9bit sanguin. Et il n&rsquo;y a pas de bonne preuves que cela est en fait un indice de la fonction endoth\u00e9liale, pr\u00e9disant les maladies cardiaque. Des centaines d&rsquo;\u00e9tudes ont montr\u00e9 que cette autre test peut donner un r\u00e9sultat faussement n\u00e9gatif (5).<\/p>\n<p>Mais il n&rsquo;y a pas que l&rsquo;huile d&rsquo;olive, d&rsquo;autres huiles ont \u00e9galement montr\u00e9es avoir des effets n\u00e9faste (fig. 1) avec une diminution significative de la fonction endoth\u00e9liale trois heures apr\u00e8s chaque repas, ind\u00e9pendamment du type d&rsquo;huile ou si l&rsquo;huile \u00e9tait fra\u00eeche ou frit (6).<br \/>\nL&rsquo;huile d&rsquo;olive peut-\u00eatre mieux que les huiles riches en omega-6, ou des graisses satur\u00e9es, mais ont quand m\u00eame montr\u00e9 des effets ind\u00e9sirables (7).<\/p>\n<p>L&rsquo;huile d&rsquo;olive extra vierge conserve une fraction des phytonutriments anti-inflammatoires trouv\u00e9 dans l&rsquo;olive contrairement \u00e0 l&rsquo;huile d&rsquo;olive raffin\u00e9e de la premi\u00e8re \u00e9tude (1). Elle ne semble pas induire le m\u00eame genre de pic des marqueurs inflammatoires caus\u00e9 par l&rsquo;huile d&rsquo;olive r\u00e9guli\u00e8re (8). Dans une grande \u00e9tude prospective \u00e9valuant la relation entre la consommation d&rsquo;huile d&rsquo;olive et les \u00e9v\u00e9nements cardiaques comme les crises cardiaques, il y avait une suggestion que l&rsquo;huile d&rsquo;olive vierge peut \u00eatre mieux que l&rsquo;huile d&rsquo;olive r\u00e9guli\u00e8re (Table 4) mais aucune des deux n&rsquo;a r\u00e9duit de mani\u00e8re significative les taux d&rsquo;attaque cardiaque (Table 3),\u00a0apr\u00e8s contr\u00f4le les r\u00e9gimes alimentaires sains comme la consommation de l\u00e9gumes qui tend \u00e0 aller de pair avec la consommation d&rsquo;huile d&rsquo;olive (10).<\/p>\n<p>Des \u00e9tudes ont montr\u00e9s que m\u00eame l&rsquo;huile d&rsquo;olive extra vierge, contrairement aux attentes, peut aussi alt\u00e9rer de mani\u00e8re significative la fonction endoth\u00e9liale (11).<\/p>\n<p>Alors pourquoi certaines \u00e9tudes sugg\u00e8rent une am\u00e9lioration que la fonction endoth\u00e9liale de la population s&rsquo;am\u00e9liore sur un r\u00e9gime m\u00e9diterran\u00e9en, un r\u00e9gime riche en huile d&rsquo;olive (12) ? Peut-\u00eatre parce qu&rsquo;il est aussi riche en aliment complet, et aussi l\u00e9gumes, fruits, haricots, noix. (12).<\/p>\n<p>Les fruits et l\u00e9gumes semblent offrir une certaine protection contre la d\u00e9t\u00e9rioration directe de la fonction endoth\u00e9liale, produite par des aliments riches en mati\u00e8res grasses, y compris l&rsquo;huile d&rsquo;olive. L&rsquo;am\u00e9lioration de la sant\u00e9 peut \u00eatre en d\u00e9pit, plut\u00f4t que du fait de l&rsquo;huile.
